Eggroll in a Bowl

I adjusted this recipe by switching the ground pork to ground turkey since my sleeve does well with turkey. You can use coleslaw mix or, do what I did, shred cabbage and carrots manually to create this delicious, low carb Asian inspired eggroll in a bowl. This was recommended by a fellow WLS patient on Instagram, and I found Kelly’s recipe on Pinterest. This was DELICIOUS and makes loads of leftovers if you are having smaller portions.

prep time:10 minutes cook time:15 minutes total time: 25 minutes servings: 4 normal servings/ appx. 8 Bariatric friendly servings

  • 1 lb ground Turkey
  • 5 Cups of shredded cabbage
  • 3 shredded whole carrots
  • 5 cloves garlic, minced
  • 1/2 tsp ground ginger
  • 1/2 cup low sodium soy sauce
  • sliced green onion

  1. In a large skillet, brown turkey and drain the excess fat (be sure it is deep as you will make everything in this skillet)
  2. Mix the low sodium soy sauce, garlic and ginger and set aside
  3. Add the chopped cabbage and carrots (or coleslaw mix) in skillet and stir or toss to mix with the turkey
  4. Drizzle the soy sauce mixture over the top of the cabbage and continuing to cook over medium heat until the cabbage begins to soften but still has a bit of a crunch
  5. Plate and serve with sliced green onions

I have plugged in the details to provide the macros for both a regular sized serving and bariatric friendly size:

This recipe is absolutely delicious! Even my husband loved it. To help with bariatric portions, I eat all of my meals on dessert plates or in a small tupperware. I recommend the Rubbermade Takealong, Twist-N-Seal tupperware. I get mine at Walmart, but you can also find them on Amazon
